
Banana and Walnut Cake Recipe
Roundhouse Banana and Walnut Cake
This recipe is quite low in fat and has a light texture. It can be made as a loaf or as muffins. Why not replace the walnuts with dark chocolate chips, the children always prefer this.
Ingredients
- 75g margarine (must be a high fat content one e.g. 70%) or butter
- 150g caster sugar
- 2 eggs
- 2 ripe bananas
- 200g Self Raising Flour
- 2 teaspoons baking powder
- 50g chopped walnuts
Directions
- Pre- heat oven to 170c (340 F), gas mk. 3
- Grease and line with greaseproof paper an 800g loaf tin (a large one)
- Cream together the margarine and sugar, beat the eggs and add a little at a time until all absorbed.
- Mash the bananas and fold into the mixture. Sieve in the flour and baking powder and again gently fold in.
- Add the chopped walnuts and pour into the tin.
- Bake for about one hour until a firm and springy to the touch.
- For the muffins, bake for about 20mins.
