Banana and Walnut Cake Recipe

Roundhouse Banana and Walnut Cake

This recipe is quite low in fat and has a light texture. It can be made as a loaf or as muffins. Why not replace the walnuts with dark chocolate chips, the children always prefer this.


  • 75g margarine (must be a high fat content one e.g. 70%) or butter
  • 150g caster sugar
  • 2 eggs
  • 2 ripe bananas
  • 200g Self Raising Flour
  • 2 teaspoons baking powder
  • 50g chopped walnuts


  1. Pre- heat oven to 170c (340 F), gas mk. 3
  2. Grease and line with greaseproof paper an 800g loaf tin (a large one)
  3. Cream together the margarine and sugar, beat the eggs and add a little at a time until all absorbed.
  4. Mash the bananas and fold into the mixture. Sieve in the flour and baking powder and again gently fold in.
  5. Add the chopped walnuts and pour into the tin.
  6. Bake for about one hour until a firm and springy to the touch.
  7. For the muffins, bake for about 20mins.
